Autumn is finally here and Halloween is just a couple of weeks away. And you know what that means! Everyone is going mad with pumpkin recipes. My Pinterest feed is full of orange and yellow colours in every shade. I am definitely not complaining – I love this time of year.
With only 6g net carbs per 100g, pumpkin is the perfect low-carb ingredient. You can do just about anything with it – soups, side dishes, breads, desserts, ice cream…

Low-carb mozzarella pie
This low-carb mozzarella pie recipe is very loosely based on Imeretian Khachapuri – delicious savoury pie with goat cheese filling. Imereti is a region in Georgia (the country in Caucasian mountains in Eurasia rather than the US state of Georgia).
Georgian cuisine is fantastic and Georgian people are justifiably proud of it.
This is why I am calling this dish “mozzarella pie” – with all the substitutions I am about to make to the traditional recipe, I could not possibly presume to call it “khachapuri” without attracting the wrath of those who know. (more…) -

Low-carb chocolate digestives
This recipe is a low-carb version of chocolate digestive biscuits.In Britain, digestive biscuits are a national treasure loved by everyone. If you are not from England, they are semi-sweet biscuits with fibery texture, traditionally made with wholemeal flour.
The name “digestive” dates back to 19th century, when these biscuits were believed to have antacid properties because they contain sodium bicarbonate.
They are great for dunking in your tea, and are often crumbled for use in other recipes, for example, cheesecake base. (more…)

Low-carb strawberry cheesecake
It’s June, berries are in season and strawberries are everywhere. Strawberries are low-carb (around 6g net carbs per 100g), and so are some of their traditional companions like cream. Perfect combination for a low-carb dessert with a seasonal flavour!
I have seen many low-carb strawberry cheesecake recipes (links to some of my favourites are provided below), and I got inspired. I already have a low-carb cheesecake recipe which tends to perform consistently well, so I just had to adapt it to include strawberries instead of my usual chocolate flavour.

Sugar is finally getting some media attention as the ultimate diet demon.
Dieticians now agree that refined sugar has no nutritional benefits. Everyone would be better off cutting it out completely.
Low-carb dieters knew about this for a long time. White sugar is pure carb. There is no place for it whatsoever on a low-carb diet.
So does this mean you will never eat anything sweet again? Of course not!
Sugar substitutes and sweeteners are now widely available, both online and in the High Street supermarkets, shops and cafes.

Low-Carb Snacks
What can you snack on when on a low-carb diet?Certainly not the stuff other people usually eat – like pastries, fruit or sweets. Don’t despair though. Many low-carb snack options are available – you just need to get used to them.
Below are some ideas for different situations, for example, when you are out and about, or when at home but don’t have time to cook.

Low-carb amaretti biscuits
Amaretto biscuit is the laid-back, unpretentious Italian cousin of the French macaron.Both are made with ground almonds and egg whites, but amaretto’s texture is infinitely easier to achieve – especially when baking without sugar, which is of course what we will be doing.
Ground almonds (also called almond flour) are a staple of low-carb baking, so this recipe is an obvious one to adapt. Amaretti should be crunchy on the outside and soft on the inside. They make a very satisfying low-carb dessert. (more…)

Low-carb flourless chocolate biscuits
As much as I love baking with low-carb flours (usually almond or coconut), sometimes you can get away without using any flour at all.This recipe for low-carb, gluten-free chocolate biscuits is completely flourless – basically you just use cocoa powder instead. You can’t go wrong with that much cocoa!
It takes about 20-25 minutes total to prepare and bake. Carb count is less than 1g net carbs per biscuit. (more…)
